Raffles Hotel Le Royal
Phnom Penh, Cambodia

Location The hotel, on a quiet side street off busy Monivong Boulevard, is handy for business and leisure; the nearby National Museum is not to be missed. Cuisine Try Christian Rose’s French tasting menu at Restaurant Le Royal, which has a Wine Spectator-lauded wine list. Highlight There are two huge pools – one for family fun and a 25-metre pool for serious laps – both surrounded by exquisite flowering trees that are illuminated at sundown. Thing to do Ask the concierge to arrange a driver/guide to show you the museum, the grassy surrounding area and the busy yellow-domed Phsar Thmey, a sprawling covered market dating back to 1937. San Domenico Palace Hotel
Taormina, Sicily, Italy

Location This 15th-century monastery sits high up in one of the island’s iconic medieval towns. Finding it without a guide may pose a challenge – take a limo from Catania airport. Cuisine Have breakfast on the outdoor terrace with a view of the Mediterranean and, haze permitting, the year-round snow-capped peak of Mount Etna. Thing to do After exploring the narrow pedestrian-only areas of this popular town, retreat to the spacious terraced gardens and heated lap pool. Room to book Rooms in the newer, 19th-century block are more spacious than the former monks’ cells. Room 263 has five-metre ceilings, polished terracotta floors and a big private terrace for sunbathing, with sea and volcano views. Rooms 105. GM Mario Ferraro.
