After spending over a month eating our way across the country, we came up with a surprisingly eclectic list for our sixth annual survey. We discovered a celebrated chef back in his hometown, a party-starting izakaya and a kitchen-less restaurant. At first glance, Canada’s best new restaurants don’t have a lot in common. Except for one thing: good, honest food.
This year’s Top 10 list marks a return to authenticity, and shows the maturity and confidence of our culinary landscape. Gone are the days of the cerebral chef transforming food beyond recognition. Ingredients took their rightful place at the table, thoughtfully – and seemingly effortlessly – prepared. The real excitement was in tiny restaurants where the chefs cared more about taste than good taste, even if that meant we were eating offal. (On a stick, no less.) We found favourite new neighbourhood spots and places that did away with fussy menus entirely and just scrawled the offerings on a blackboard. In other words: fun, writ large.
