The Barbecued Pork Shoulder Sandwich

In the Carolinas, barbecued pork shoulder is an obsession that makes all others (Facebook, NASCAR, giant twine balls) seem tame. Throughout North and South Carolina – where the tiniest alteration of a recipe, down to a blush of chili in vinegar, constitutes a regional style – you can always start a long conversation by asking, “What’s the best barbecue around here?” You don’t have to know that “Lexington-style” means salted shoulder cooked over hickory and oak for nine hours to walk into the Lexington Barbecue – justly considered one of the world’s best barbecue joints – and order sandwich after sandwich. But if you want to show off, ask for your sandwich “brown” – that is, with the barbecue full of bits from the caramelized outer layer. Soon you’ll be sharing this insider information with others and sparking more Carolina ’q obsessions.
