The Corned Beef Sandwich

In the sexy world of cured meats, much attention is given to Montreal-style smoked meat and New York pastrami. But the hearty corned beef sandwich takes a back seat to no other red meat-and-mustard combo. This brined brisket sandwich – “corned” refers to its salt and peppercorn seasoning – is a deli staple and, let’s face it, a key part of any respectable breakfast hash. Served up with boiled potatoes but no bread, it’s a classic Irish-American meal. Slap it between slices of rye, however, and it becomes a perfect St. Patrick’s Day snack – if only as a reminder of when you still did things standing up. One of my favourite spots offering it is McBob’s in Milwaukee. Accompany it with a beer in a bottle and a song on the jukebox for the perfect neighbourhood comfort food. Sláinte!
