At Mahjong, in Lisbon’s hilltop Bairro Alto district, the ceiling is hung with plastic heads of lettuce. In the light of projected movies, this little bar (also known as the Lettuce Bar) serves tropical cocktails informed by Portugal’s colonial history. The Portuguese are particularly keen on Brazilian bebidas – short, brawny drinks built from smashed fruit and strong liquor, like the cachaca-based caipirinha and its vodka-laced cousin, the caipiroska. Every imaginable ingredient is included: lime, kiwi, papaya and more. One of the best recipes is Mahjong’s morangoska, which blends Brazilian passion fruit and fresh strawberries. A lettuce version, however, is yet to arrive.
Morangoska
In a cocktail shaker, muddle 2–3 chopped strawberries, 1 oz passion fruit juice and 2 tsp simple syrup or granulated sugar. Add 2 oz vodka, top with ice and shake convincingly, then strain into a short glass filled with crushed ice.
