The Blue Crab Sandwich

Baltimore is proud of its crabby reputation. It’s at the head of Chesapeake Bay, which teems with the world’s tastiest crustacean, the blue crab. And everyone there is mad for crab: steamed and spiced hardshells, soft and delicate crab cakes, comforting she-crab soups and, my favourite, the soft-shell crab sandwich.

Nicknamed for its brightly coloured claws, the blue crab has an exoskeleton that moults; it can then be eaten whole, without any of the calorie-expending fuss of shell cracking. Dredged in seasoned flour, flash-fried and served on white bread, the soft-shell crab sandwich is a delicacy with the instant gratification of street food.
