Pointillism meets the tropics. When the Art Institute of Chicago asked ex-Bellagio staffer Bridget Albert to design its signature drink, she looked to Georges Seurat for inspiration. After seeing the mischievous monkey in A Sunday on La Grand Jatte, Albert came up with a drink as playful as the painting. The alcohol has the same soft colours, and the sugared rim is a take on the dots in the painting. This summer and fall, the restaurant will serve this and other cocktails based on the gallery’s permanent collection. Naturally, they need to be seen and tasted to be believed.
Sunday in the Park
Coat the rim of a champagne flute with periwinkle blue sugar. Shake 1 1/2 oz Grey Goose La Poire, 1/2 oz lemon juice and 2 oz guava juice and pour in flute. Fill remainder with splashes of grenadine and prosecco. (Albert uses Martini & Rossi Prosecco.) Decorate with plastic cocktail monkey.
