Bagshot, England England’s world championship rugby football team lives at sprawling Pennyhill Park Hotel during training periods. As well as a first-class rugby pitch, the 123-room resort, near Heathrow, has five pools, 21 spa treatment rooms, 18 holes of golf and the best cigar selection in the country. Stay in one of the newest rooms, say 624, looking out at the foliage, and do not miss the signature roast tomato with basil jelly cube starter in the panelled Latymer Restaurant. GM is David Broadhead.
Quebec City Fairmont Le Château Frontenac executive chef Jean Soulard has a growing fan club for his books, his weekly TV show on Canal Vie and his cuisine. (In the hotel’s Le Champlain, he makes even a simple salad say wow by serving ingredients side by side, with nasturtium flowers and caramelized citrus.) The Van Horne suite has sensational views across the St. Lawrence to Lévis. GM is Alex Kassatly.
Paradise Island, Bahamas The two-floor One&Only Ocean Club, run by GM Russell Miller, is only a few grassy metres from the magnificent sandy beach where Cindy Crawford was married. Downstairs rooms also allow easy access to the Mandara spa, glorious pools and beautiful gardens, with ancient sculptures and a 13th-century abbey cloister. Cycle around the island or play a round on the club’s Tom Weiskopf course. Dine in the water’s-edge restaurant, Dune, run by top New York chef Jean-Georges Vongerichten.
Saint-Christophe-sur-Condé, Normandy, France
Château La Thillaye, which dates back to 1642, is now owned by Montreal-born Roxanne Longpré and her husband, Patrick Matton, who cooked in that city for 30 years. Make yourself at home in any of the six recently modernized suites, with salons, a library and 28 hectares of surrounding woodland. Matton cooks magnificent gourmet dinners, served by candlelight, and a great Canadian breakfast in the beamed kitchen. He also offers guided trips to local markets as well as cooking classes.
Rajasthan, India
