Champlain Charest is the proprietor of Bistro à Champlain in Sainte-Marguerite-Estérel, Que., which has held a Wine Spectator Grand Award for its wine list since 1988.
Paul Grieco, the former beverage director of Gramercy Tavern in New York City, won a James Beard Award for Best Wine Service in America and now runs his own restaurant, Hearth.
Natalie MacLean is an accredited sommelier and a wine writer who won a 2003 James Beard Foundation Journalism Award for on-line drinks writing (www.nataliemaclean.com).
