I’d come down from a mountaintop for this rarified blend of Zen monastery and hipster hang – and for Victoria chef Sam Benedetto’s parade of small tasting plates. Mostly local organic ingredients meet worldly influences to produce sautéed veal sweetbreads and pickled beets on frisée with a walnut emulsion, or spotted shrimp cakes with Ragley Farm greens and parsley-bacon vinaigrette. Roasted halibut gets a pleasing tweak from browned butter but then a surprising uppercut from baby bok choy. And just when you think it’s goodnight nurse, you’re finished off with a scoop of wicked jalapeno chocolate ice cream – and an after burn you’ll remember fondly on your way out the door.
