Our favourite perk at Jade Mountain was the small wine cellar in our rambling Sun suite. For more great views, check into the hilltop suite at Ladera, which is perched on a ridge about 300 metres above the Caribbean Sea.

Reservations are a must at the Japanese-Moorish decorated TAO, if only for dessert: a triple crème brûlée with ginger and truffle, black sesame seed and lemongrass with coconut.

Ask Ladera’s bartender, Barley, for a Banana Lady: half a ripe banana, ½ cup Tropical Lady, 2 oz coconut cream,
1 oz whole milk and an indiscriminate amount of rum, mixed with ice. The restaurant’s charismatic executive chef leads cooking classes at Ladera.

Snorkel in the National Marine Reserve to see hundreds of yellow-striped sergeant fish – and a barracuda or two. Then hop on the boat to explore the 910-metre
underwater coral wall.
The transcendental yoga evening class in the Oasis had us chanting “om” as the sun set over the Caribbean.

The most efficient and comfortable way to see St. Lucia is by water taxi, found at most beaches. Ask your captain to pass by George Foreman’s home in Marigot Bay and to stop at the fluttering mouth of the Gros Piton bat cave.
